Write a letter MadLib! - posted from Savannah, GA
I have a hesitant writer who also didn't want to dictate a complete letter to me - that felt overwhelming. So she actually came up with the suggestion to write a MadLib! So I wrote a letter with blanks and then asked her to give me parts of speech to fill it in (noun, verb, type of habitat, city, state, etc). This ended up being an excellent combo activity for writing, vocabulary, parts of speech... so many things! We had fun with it. :)

For this activity I had my son write an actual letter to his cousin that lives in a different state. This made it more real and exciting for him.
